Wow!

Two posts in one day?  What? 

Anyway, it's not a craft, but it is delicious.  This is a recipe slightly adapted from one over at Kalyn's Kitchen, which I'm pretty sure she adapted from someone else if I remember correctly.  Either way - awesomeness!

Quick and Easy Chile Rellenos Bake (My favorite Mexican food.)

2 cans chopped chiles (Not pickled, just chopped.  Kalyn's called for whole chiles, but search as I may I cannot find them anywhere not pickled.)
4 cups grated Mexican cheese blend ( I use about 2-3 cups)
1/2 c thinly sliced green onions
1 1/2 c EggBeaters
1/2 cu fat free milk
3/4 tsp cumin
3/4 tsp chile powder

Spray glass casserole dish. 
Spread one can chiles in bottom of pan.  Cover with half the cheese.  Top with half the onions.
Repeat.
Beat together EggBeaters and milk.  Add cumin and chile powder.  Pour over  chiles and cheese, making sure to evenly distribute the eggs.  Bake covered for the first 15 minutes then remove and continue to bake for 25 minutes (40 minutes total) until mixture is bubbling and lightly browned.  Serve hot with sour cream, salsa and warm tortillas.

Yum!
